Sambal Matah (Shallot + Lemon Grass Sambal)

Sambal Matah

An easy recipe for making Balinese Shallot + Lemongrass Sambal. Perfect to be eaten together with Lawar Ayam (Balinese Green Bean Salad with Chicken Dressing).

Sambal Matah (Shallot + Lemon Grass Sambal)

Adapted from “The Food of Bali”


15 shallots, peel and slice finely

7 cloves of garlic, peel and slice finely

10-15 bird’s eye chiles, slice finely

5 fragrant lime leaves (kaffir lime leaves), cut in fine shreds

1 tsp roasted terasi (dried shrimp paste)

4 stalks lemongrass, tender part only, very finely sliced (or you can use 2 Tbsp lemongrass paste – for Tokyoites both fresh and paste version are available at National Azabu Supermarket)

1 tsp salt

1/4 tsp crushed black peppercorns

2 Tbsp freshly squeezed lime juice

1/3 cup (90 ml) vegetable oil

Sambal Matah ingredients


In a small mixing bowl, combine all ingredients and mix thoroughly for a couple of minutes before serving with fish or chicken
